Chris,
Great question. Unfortunately, I don't really have a great answer for you. Our iPads are for short-term use only, as so far we only distribute them during class. As such, students don't really have the free time to play around that much. I am sure that we will come across something like this soon though.
To avoid such things, we do a quick once-over of iPads when they are returned to check for such things. If there is such an issue we can quickly restore the iPad in question from the template backup we keep. It may not be the best solution, but the added step reminds us to keep a close eye on the devices and to not take them for granted.
Have you had issues with students altering iPad settings? How have you dealt with it?

"A friend",
Yes, iCabMobile is not free, but it is worth every yen. I will make you a special offer...
Buy the app, and if you don't love it I will send you a gift of equal or greater value.
Or, if you like, use the Contact form to give me your iTunes account ID and email address, and I will "gift" the app to you via the App store. (I have already gifted it to a few students, so why not you too?)
Thanks for taking the time to comment. ;^)

[...] Check out this short Youtube video to see how I added a self-portrait and some text to a Keynote presentation. I have been using Paper recently to save sketches, text, and charts to add to my course materials. I have used it on my course websites, Keynote presentations, and classroom handouts. It is simply a great way to make your materials more personal. Is it ironic that I am suggesting the use of technology here to add a “personal touch” to your course materials? It certainly seems odd to me, but it just makes sense. iPads for Teachers » A Personal Touch [...]
